Hilton and Waldorf Astoria Hotels & Resorts presents an evening featuring the renowned culinary team from Waldorf Astoria Los Cabos Pedregal as executive chef Gustavo Pinet invites guests to traverse through the unique flavors crafted and cultivated throughout Mexico.
At this evening’s special dinner, guests will embark on a culinary journey through the distinct regions of Mexico, from coastal fare to farm-to-table favorites, with TRAVESÍA’s multi-course tasting menu and cocktail pairings surrounding the beloved taco.
Discover the Mexican traditions and native cooking techniques to enhance a taco’s flavor profile such as fresh tortilla’s being created on a traditional comal. As its name denotes, the spirit of exploration is at the core of TRAVESÍA. Here, curiosity is equally as important as the cuisine, seeing that it provides a compass to Mexico’s diverse food culture and its dedication to fresh ingredients, which inherently encourages sustainable practices.

About Gustavo Pinet:
Gustavo Pinet has been executive chef of Waldorf Astoria Los Cabos Pedregal since 2016, where he oversees all culinary operations at the resort including the resort’s cliff-side, award-winning restaurant, El Farallon, Don Manuel’s, The Beach Club, Crudo, weddings and social events (including cooking classes), poolside dining and the resort’s in-room dining program.
As a native of Mexico City, chef Pinet’s culinary journey began in his grandmother’s kitchen where he would watch her cook his favorite meals. His curiosity and love of food led him to pursue his formal training at the University Claustro de Sor Juana. Not only does chef Pinet bring his culinary prowess in Mexican fine dining and international techniques to Waldorf Astoria Los Cabos Pedregal's culinary program, he’s also passionate about sourcing the freshest ingredients from Baja California all the way to the Yucatan to offer a one-of-a-kind culinary experience to guests.
About Manuel Huerta:
Chef Manuel Huerta has been with Waldorf Astoria Los Cabos Pedregal for over seven years, working in all culinary operations and was recently appointed to chef de cuisine at the property’s Don Manuel’s restaurant. Born and raised in Guanajuato, Mexico, chef Huerta brings influences from Leon and his previous culinary experience at Grand Velas Riviera Maya to Don Manuel’s eclectic and seasonal menu.
About David Hernández:
As the director of bars at Waldorf Astoria Los Cabos Pedregal, David Hernández is responsible for shaping and enhancing the resort's impressive beverage program. From developing innovative drink menus, executing exclusive events, and curating memorable, over-the-top experiences, Hernández’s visionary leadership ensures that every aspect of the beverage operation exceeds guest expectations. Hernández’s thirst for knowledge and passion for innovation has led him to become a certified tequila expert and master taster by the Mexican Academy of Tequila, Wine and Mezcal Tasters. He brings this strong expertise and desire to educate guests on Mexican spirits and culture to the resort, where he inspired and led the introduction of a truly immersive tasting experience, Agave Study at Peacock Alley, which features a curated selection of high-end and rare agave spirits. To develop this experience, Hernández worked directly with the “Maestro Mezcaleros,” otherwise known as the guardians who preserve and protect the traditional harvesting and distillation process in Oaxaca and specialize in the deep cultural traditions of these classic spirits. In addition to the Agave Study, Hernández also worked with Koch El Mezcal to create a series of signature mezcal spirits which were added to the resort’s Private Pedregal Collection this year.
