About Russell Rummer:
Chef Russell Rummer brings decades of culinary experience to the table at oceanfront Italian restaurant, Ferraro’s Restaurant and Bar at Four Seasons Resort Maui. Working hand-in-hand with the talented culinary team, chef Rummer is responsible for overseeing the menu creation for the 2024 reimagination of the Resort’s iconic restaurant, featuring coastal Italian cuisine under the Maui stars.
Chef Rummer discovered his passion for cooking and Italian cuisine at a young age, and has since travelled to Naples, Italy, on three separate occasions solely to immerse himself in the country’s culinary traditions. Over the course of his career, he has worked in various kitchens around the US, most notably training under the culinary powerhouse of chef Traci de Jardins and at San Francisco’s beloved James Beard Award–winning Italian restaurant Delfina, before venturing to Maui with his family in 2022, to embark on a new adventure with the acclaimed culinary team at Four Seasons Resort Maui.
At Ferraro’s Restaurant & Bar, chef Rummer melds his Italian cooking background with the freshest local ingredients, emphasizing the island’s bounty of fresh seafood and produce to create a unique coastal Italian dining experience. In addition to the many seafood-forward dishes, guests of Ferraro’s can expect to find a wide variety of delicate handmade pastas, a selection of crudo, tableside caviar, and more, on the vibrant and tasty menu.

About Ashish Thalakkat:
Originally from Mumbai, Ashish Thalakkat comes from a family of doctors and engineers. Initially studying medicine, he was inspired to shift his focus after a friend introduced him to the world of pastry.
As the executive pastry chef at Four Seasons Resort Maui at Wailea, Thalakkat is not just creating desserts—he’s crafting experiences that capture the essence of the island. Thalakkat’s role encompasses designing pastry menus and bakery items across the Resort’s diverse dining venues, including the signature Ferraro's Restaurant & Bar, DUO Steak and Seafood, Lobby Lounge, in-room dining, and special events. His creativity is deeply intertwined with the Resort’s vision, which he enhances through his distinctive style.
Thalakkat’s scientific background has shaped his unique approach, involving deep dives into the properties of individual ingredients and their molecular structures. His dedication to innovation has led him to work with prestigious international luxury hotel groups, from Muscat and Victoria to San Francisco, Washington, DC, and New York City, where he briefly served as executive sous chef before joining Four Seasons.

Tickets to events held at Platform at Pier 57 by the James Beard Foundation cover the cost of food, education and a unique dining experience. Meals are prepared by culinary masters from all regions of the United States and around the world. Unless otherwise stated, alcoholic beverages are provided on a complimentary basis and are not included in the ticket price.

James Beard Foundation events permit guests age 21 years and older to attend events where alcoholic beverages are served.

Event Policy

Reservation Policy:

All reservations are non-refundable and must be made in advance. Should the event be cancelled due to any unforeseen circumstances, including COVID-19, JBF will offer a range of options, including ticket exchanges, the option to donate tickets, or a full refund.
