About Sidney Schutte:
Born in Middelburg, the Netherlands, chef Sidney Schutte discovered his passion for culinary arts as a teenager. At 17, he moved to Zuid-Limburg to pursue a chef's career, gaining experience in well-known restaurants like De Bloasbalg and De Librije. In 1999, Sidney joined De Librije as sous chef, contributing to its rise to a three-Michelin-starred status. After a decade at De Librije, he ventured internationally, eventually becoming executive chef at Amber in Hong Kong. Returning to the Netherlands in 2015, Sidney earned two Michelin stars at Librije’s Zusje in Amsterdam. In 2019, he rebranded the restaurant as Spectrum, where he now leads with his unique culinary style.
