A Hands-on Fermentation Exploration with the Chef of Michelin-Starred Danji

Discover the art of making traditional Korean kimchi in this hands-on class led by renowned chef and kimchi expert Hooni Kim. Using authentic ingredients (including Hooni’s own gochugaru made with peppers grown in Haenem, Korea), this class will provide a comprehensive guide to crafting two types of kimchi: napa cabbage and Korean radish. Chef Kim will delve into the science of fermentation, discussing the role of probiotics and how they contribute to their flavor and health benefits. Each participant will take home their own batch of kimchi, which will continue to ferment at home. Takju from Hana Makgeolli will be served as a traditional accompaniment to the flavors of kimchi.

Copies of My Korea by Hooni Kim will be available for purchase with tickets and at the event from our friends at Kitchen Arts & Letters.

About Hooni Kim: 
Hooni Kim is the chef and owner of Danji, the first Michelin-starred restaurant in Korean cuisine, Meju, his most recent Michelin-starred restaurant specializing in Korean fermentation, and Little Banchan Shop, a retail Korean food boutique in Long Island City, New York.
Born in Seoul, he divides his time between New York City and Korea, where he is the founder of Yori Chunsa, a nonprofit that trains orphans to become cooks. 


Tickets to events held at Platform at Pier 57 by the James Beard Foundation cover the cost of food, education and a unique dining experience. Meals are prepared by culinary masters from all regions of the United States and around the world. Unless otherwise stated, alcoholic beverages are provided on a complimentary basis and are not included in the ticket price.

James Beard Foundation events permit guests age 21 years and older to attend events where alcoholic beverages are served.

Reservation Policy:

All reservations are non-refundable and must be made in advance. Should the event be cancelled due to any unforeseen circumstances, including COVID-19, JBF will offer a range of options, including ticket exchanges, the option to donate tickets, or a full refund.
