An Immersive Pairing Experience with Food, Music, Spirits, and Artisan Beers
25 11th Ave, New York, NY 10011, USA
You may know Trillium as the iconic New England producer of craft beers but get ready to meet another side of this farmhouse-inspired brewery. To celebrate the launch of their new line of spirits, Trillium invites you to dive into a one-of-a-kind experience with their Headroom hi-fi lounge, where the beats are as fresh as the eats.
Trillium has created an immersive pairing experience with dishes and beverages dialed in to a handpicked album that elevates the flavors, textures, and vibes. This isn’t just food; it’s a full-on sensory trip where sound and taste come together in perfect harmony. Each track is chosen to amplify the mood of the dish, like pairing Vulfpeck’s funky rhythms with burratini—it’s a fresh, vibrant combo that’s gonna make your taste buds and your ears dance.
In short, this isn’t just a meal; it’s an interactive journey where sound and taste groove together. So, kick back, let the music and food take the lead, and enjoy this sonic-culinary adventure.

About Will McNeil:
Will McNeil started washing dishes in the back of a Vermont steakhouse at age 14. He hasn’t left restaurants since. Within his nearly 30 years in the hospitality industry, McNeil, a graduate of the Culinary Institute of America, has worked in high-end kitchens, but mostly, he runs the show. His resume includes some of the most important restaurants in Vermont, including the now-shuttered Christophe's on the Green, and he was the former co-owner of Heirloom Hospitality which included the James Beard Award®–nominated Hen of the Wood, Doc Ponds, Prohibition Pig and Pro Pig Brewery. McNeil is now the food and beverage director at Trillium, a modern New England–based food and beverage group, best known for its leadership in the modern craft beer scene in Boston. He helped conceive Trillium’s newest offering: Headroom, a hi-fi lounge and cocktail bar where DJs spinning vinyl share top billing with drinks made from the group’s in-house spirit line. McNeil is a self-described audiophile with a 500-strong record collection. He loves going to shows, snowboarding, has two daughters, and lives outside Boston.
About JC Tetreault:
Jean-Claude “JC” Tetreault is the co-founder of Trillium, a modern New England–based food and beverage group. Since opening in 2013, Trillium has grown from one brewery to five locations across the greater Boston area, including a distillery and a farm. Combining his background in biology and biochemistry with rule-breaking innovative techniques, JC and the Trillium team produce nearly 200 beers every year, with many cult favorites and critically acclaimed brews.
About Trillium:
Founded in 2013 with the desire to create a lifestyle through craft beer, Trillium is a modern New England farmhouse–inspired brewery, distillery, and hospitality group rooted in community and shared experiences. Our core values drive our approach: a desire to push the boundaries of experimentation with innovation, education, and a focus on hospitality in warm and welcoming spaces with a wide range of styles for a diverse audience. Trillium operates a brewery, distillery, and restaurant in Canton, a greenhouse-inspired brewery and taproom in Fenway, a beer garden and brewery on the Rose Kennedy Greenway, and a brewery and restaurant in Boston’s historic Fort Point neighborhood. Trillium continues to innovate and dive further into the beverage world with whiskeys, canned seltzers, and cocktails.
